Roaster description

Established in 2000 after separating from a larger union, Thiriku rebuilt itself from the decline of failed wet mills into a focused, quality-driven factory at the base of the Aberdare Mountain Range in Nyeri County. Cherries are grown on red volcanic soils above 1,600 MASL, where cool nights and bright days slow maturation and concentrate sugars. In Kenya, coffees are graded by size, with AA referring to the larger, denser beans typically associated with vibrant structure and clarity. During harvest, farmers deliver freshly picked cherries to Thiriku Factory, where they are pulped and fermented to remove mucilage before being fully washed and soaked. The parchment is then dried on raised beds for 7–15 days to reach 10–12% moisture, with processing water recirculated to support conservation. Once stabilized, the coffee rests in parchment before final milling and export.
