This year, we’re proud to introduce the work of Hans, the young, Q Processing certified coffee processor behind Ravennerro in East Manglayang, Sumedang, West Java.This highly-regarded single-variety Java, cultivated by farmers in Gewor Village at a high elevation of 1500-1600 MASL.The combination of the high-grown Java varietal and Hans’s modern, scientific approach to post-harvest processing is what makes this coffee truly special. Hans utilizes a unique Dark Room Hybrid Washed technique to achieve unparalleled complex cup. After an initial 24-hour oxidation, the coffee is transferred to a controlled dark room, where temperature and humidity are precisely maintained for an extended 36-day drying period. This slow, careful drying maximizes bean flavor, resulting in an intensely complex and sweet cup.
